~Egg and Onion Steak Breakfast~



This type of breakfast is probaby my favorite. It is so filling and so easy to make that we can have this every morning, if  only I had more then just myself to make it for. I especially love it with extra hot sauce smothered all over!!

Step 1) All I did was sliced a New York Strip steak into thin strips, and sliced up 1/2 onion, and the  2 stalks of green onion. I fryed all the meat over high heat (to make sure the juicy are trappped) then added the onion. Fried for a few more minutes and when done turned off: add pepper steak seasoning and the green onions...
Step 2) Then I fry the eggs very lighty, I like mine Sunny Side up :) With some seasoning and freshly chopped dill.

Served with some toast, and used it to dip in the delicious eggs and hot sauce! Yum!!!

  ~Quik N Easy Meatball Soup~






I try to make soup once in awhile, although my kids love soups, it just seems like a hassel for me to make a soup... This soup I found to be so simple to make and has very simple ingredients that every pantry has...

Ingredients:

3 lrg potatoes, cubed
1 med onion, chopped
2 carrots,  finely
2 stalks Celery, thinly sliced
3/4 lb. ground Pork
2 stalks of Green Onion, chopped
dill, chopped (to taste)
Salt, Pepper & Vegeta (no MSG kind), also to taste
4 tbls Flour
3 tbls butter
5 cubes chicken flavored bullion

Directions:

1) Fill 6qt pot with 3/4 water, add potatoes, celery and  1/2 onion and bring to boil. Reduce heat, let boil about 10 min.
2) In mean time, lightly brown the little meatballs in a few tables spoons of vegetable oil over med-hi. Add 1/2 the onion and all carrots, continue cooking until tender and the onion is transparent. Turn down to the lowest possible heat. Add 3 tbls butter to that now and let it melt.
3) In a cup or bowl mix  3/4 cup water and wisk in the flour. Add the bullion cubes, crush them a little. Then add into the skillet with the meatballs. Stir well and let simmer one minute.
4) Add the meatball mix into the soup pot. Let simmer all together for another 5-10 min. Add salt, Vegeta (no MSG kind) to taste. Let simmer a minute or two and turn off. At this time you can add the dill. You can also add the green onions but I like to put it in fresh when I make a bowl.

~ Egg & Sausage Soufflé ~ (a Panara Bread copycat)


Such a great way to start your morning with this amazingly fluffy, savory, full of flavor, pastry mini Pie!

    It is so quick and easy to make this dish, and all my kids love and enjoy it! It’s basically eggs, sausage links, and cheese in a lil pie! So much more fun to eat, than the tradition frying we are so used to! Something different for a change! You can always change up the fillings. I originally started making this after trying Panera Breads Spinach SoufflĂ©, so this is my version of it… But the first one I tried, I used eggs, spinach, bacon, onion…

There are so many variations for this! You can make absolutely anything that you or your family prefers!!

 
Ingredients:
5 eggs
1 cup sausage, ham, or bacon (chopped and fried lightly)
½ medium Onion, chopped and fried with meat
½ red bell pepper, chopped and also fried with meat
6 (4x4”) Puff Pastry squares (Pepperidge Farms)
3 tbls heavy cream
½ cup cheese, grated.  (Any cheese) I used fresh mozzarella & Parmesan
1 tbls milk
Salt & pepper
Directions:
In a microwave safe bowl, whisk the 5 eggs, for about 4 min… Mix in milk, cream, the cheese and salt & pepper to taste. Stir in all the other cooked ingredients…


Microwave egg mixture for 30 seconds on high, and then stir it. Repeat this about 5 more times or until you have a very runny scrambled egg mixture. This will tighten up the eggs enough so that the dough won't sink into the eggs when it's folded over.
 
Brush melted butter inside six 4-inch baking dishes or ramekins. Sprinkle 1 tablespoon of parmesan cheese on top of the egg mixture in each ramekin, and then gently fold the corners of the dough over the mixture. As shown below in picture.
Then brush with egg wash (beaten egg).
 
Bake at 375 for approx 25 or until golden brown!
