I absolutely love the things you can make and eat with this soft, somewhat fluffy, pocketless flatbread. I had a doctors appoitment last week and stopped by at Schlotzky's cafe and they served this amazing California Chicken Avacado Flatbread. I paid nearly $8 just for the flatbread alone and had it all to myself! It was topped with all my favorite goodies. I wanted more but figured there has to be an easy cheap way of making it at home! So I started my search for the perfect flatbread to begin with. And here is what my result come to be!
I think I found the perfect recipe. I have made it three times already and its perfect every time, actually it gets better with each try for me. I love to have a nice sandwich with flatbread or just top it up and toast in oven serve as pizza. Or even cut it into pieces and toast in oven and serve as dipping chips with hummus (although they are not as hard and crunchy but still easily serve with dip).
Ingredients:
Directions:
1) Combine the yeast, sugar, water, milk, oil and salt in a mixer bowl. Mix with spoon let sit for 2 min.
2) Then add one cup of flour and using the dough hook attachment mix until combined gradually adding more flour as needed to make soft not hard dough. I added flour and mixed until the dough stopped sticking to the bowl. But be sure not to over-add flour! I then let it mix on low speed for about 5-8 min.
3) Remove the dough, place in lightly greased bowl, cover and place in warm place for an hour or I just let it sit in the sun for 30 min for faster resting/rising time.
4) When doubled in size place on lightly floured counter surface, divide in 6 pieces. Cover with towel let rest for 5 min that way it will be much easier to roll out.
5) Roll out each piece to a size that your pan or griddle is or your preffered shape/size.
Fry in very lightly oiled pan/griddle about 2 min or each side on low-med heat....
