Chicken Chebureki

I love making these simple, easy, and fast to make Chebureki for lunch. You can fill them with absolutly any type of ground meat and they will taste great but I personally prefer chicken.


I have not yet made the dough from scratch but hoping to learn how to make that in the near future... Not sure if its worth all the hassel as I am not very fond of making any types of dough. But this will work for now. I bought these Fresh Uncooked Tortillas at Costco not sure how much they were but very very worth every penny.


Ingredients:
1 lb. Ground Chicken (I grind mine from chicken tenders at home)
Parsley, chopped just a handfull, to taste
1 small Red Onion, minced
2-3 stalks Green Onion, chopped
1/2 Sea Salt
1/2 tsp Lemon Pepper

Directions:
Mix all ingredients together. Top each tortilla as pictured below. I used few tablespoons of Veg Oil and few or Olive Oil but any kind will work. Cook on med for 4-5 min on each side or until well cooked. I do not put too much filling just a thin layer, so it only takes a few minutes on each side to cook thoroughly. 










I like to enjoy mine with Sweet Chili Sauce but will go pretty well with any other favorites you might have. My kids love it with sour cream :)

Enjoying the last few days of Summer

We are few weeks away from starting school. We are all very excited and anxious to begin this fun second year into homeschooling. I feel like there is still so much I need to learn and figure out what will be working best for the kids this time around. I know I have learned a lot but there's always more to find. We are starting school September 8th this year and I have not gotten my curriculum yet. My classroom is on hold right September 1st is when I will officially step into it and start getting ready I think one week will be enough right? I have planned a few of our group lessons for the first few months and everything prepared so I'm not worried about that! I'm just dreading the classroom organizing part, so Yea I really hope one week will be enough for me! But for now we are enjoying every day of our summer vacation!
Today we went to Lake Lure with the kids. They had a blast! This was our last trip to the lake this year, we could have still went many times considering the amount of summer hot days left but everything closes early here! The lake park closes August 24th and the rest of the fun activities have mostly been closed now since school started and some will be open Saturdays but who wants to go there on Saturday when there is only couple million people stuffed around there like sardines... Yea this is my story for today! Here are a few pictures from our Lake trip 

The Homeschool Curriculum we chose for 2013-2014...

Would like to share with those who are interested about what Curriculum I chose for the kids this year for homeschooling. I decided to keep it simple for our first year and we are still experimenting  and trying out new books and new ways of learning that will work the best with our kids. What will work for others might not work well for our kids or the other way around. Remember this is my first year so I am still learning new technique's, learning of new books etc. I did try to do my best at researching on the curriculum I chose for this year but I might be playing around with other books as the year goes on...
